Pão de Queijo Eggs Florentine

2 Pão de Queijo

2 poached eggs

½ cup spinach

Salt and pepper

½ cup Hollandaise sauce

1 pinch nutmeg

1 pinch cayenne

½ lemon, garnish


  1. Cook the Pão de Queijo as directed and then cut them in half.

  2. Poach a few eggs and gently set aside while you make the sandwich.

  3. Place some cooked spinach down onto the bread half and then the poached egg, topped with Hollandaise and finally some cayenne pepper, nutmeg, salt and pepper.

  4. Serve right away while still warm.
