Mac and Cheese Bites

1 package Forno de Minas Pão de Queijo

1 tablespoon butter for greasing baking tin

1 cup elbow macaroni

3 tablespoons butter

1 cup milk

1 tablespoon tapatio hot sauce

1 tsp salt

½ teaspoon black pepper

1 cup sharp cheddar cheese, grated

½ cup gruyere cheese, grated

⅓ cup all purpose flour

1 tablespoon bacon bits

1 green onion, sliced thin for garnish


  1. Preheat oven to 375 degrees.

  2. Grease mini baking tin with melted butter and set aside.

  3. Make rue by heating a saucepan with 3 tablespoons of butter and ⅓ cup of flour. Slowly mix in milk, keep stirring as you do this. Add grated cheese, allowing it to melt as you add. When mixture is smooth, add a few drops of hot sauce and a pinch of salt and pepper. Remove from heat.

  4. Cook macaroni as directed on the packaging and drain. Place into a large bowl. Mix in with cheese mix and stir.

  5. Take baked Forno balls and cut them into little cups, cutting off a lid from each. Place balls into the baking tin holes and then, scoop in mac and cheese. Do this for all.

  6. Bake for 25 minutes, until the mac and cheese gets crispy and golden brown. When they are cooked, top them with bacon bits and fresh chopped parsley.
