Stuffing with Forno de Minas Pão de Queijo

2 bags Forno de Minas Pão de Queijo
1 yellow onion, diced
2 celery stalks, diced
2 eggs, beaten
¼ cup fresh chopped sage
2 cups chicken stock
Salt and pepper to taste
1 stick (8 oz butter)
Preheat oven to 350 degrees.
In an oiled frying pan, cook sausage. Set it on plate with paper towels to drain.
In a medium pot, melt down a bit of your stick of butter. Add diced onion, celery, and sage. Allow to cook down for a few minutes.
Cut the Pão de Queijo into quarters and add them into the pot with beaten eggs. Stir everything together and then, add chicken stock. Fold everything together. Mix in the sausage and stir, until everything is covered.
Pour mix into a greased baking dish and cut the remaining butter into small pieces. Place around the top. Place in oven and bake for 40 minutes, uncovered.
When the top is crispy and a nice golden brown, take out and serve with your Thanksgiving feast.
