Roasted Beet Hummus with Pão de Queijo
Total Time: 50 minutes
1 package Forno De Minas Pão de Queijo Rolls, for dipping
1 large beet, roasted and peeled
1 can chickpeas, rinsed and drained
½ lemon, juiced
½ teaspoon salt
⅓ cup olive oil, and for garnish
Parsley, chopped for garnish
Cook Pão de Queijo as directed on the back of the bag and set aside.
Wash 1 large beet and then roast at 400 degrees F for 40 minutes, until soft. Take out and let cool. Peel off the skin and roughly chop.
Toss beats and all other ingredients into food processor and blend until smooth.
Take out and garnish with fresh chopped parsley and a drizzle of olive oil. Serve with your favorite veggies and fresh baked Pão de Queijo Rolls.
