Pão de Queijo Egg Salad Footballs

Serves: 8-10

Ingredients:

8-10 Forno De Minas Pão de Queijo

6 eggs, hard boiled and peeled

¼ cup mayo

1 teaspoon mustard

¾ teaspoon white wine vinegar

Salt and pepper to taste

¼ teaspoon paprika

1 green onion, sliced to look like football grip

Directions:

  1. Bake the Pao de Queijo rolls as directed on the back of the package on a non lined baking sheet. Take them out and set aside to cool.

  2. Boil water in a pot. Once boiling add the eggs and let cook for 6-7 minutes. Take them out, let cool and then peel them.

  3. Chop up the hard boiled eggs and toss them into a bowl.

  4. Mix mayo, mustard, wine vinegar, salt, pepper and paprika in with the eggs and mash together.

  5. Slice the Pão de Queijo rolls into halves and lay them out. Take a scoop of egg salad and place onto the roll. Do this for as many as you can.

  6. Top the egg salad with thin slices of green onion to make football laces.
